Egg Float Test: Does It Actually Work?

The egg float test is one of the most popular kitchen hacks for checking egg freshness — drop the egg in water, and if it sinks, it’s fresh; if it floats, it’s old. But how accurate is this test really? Understanding the egg float test requires knowledge of the air cell, shell porosity, and the limitations of buoyancy as a freshness indicator.

The Physics: Why Old Eggs Float

Imagine an egg as a tiny submarine. The submarine has a sealed hull (the shell) and an air-filled ballast tank (the air cell at the wide end). When the submarine is new, the ballast tank is tiny, and the submarine sinks. Over time, water evaporates through 7,000-17,000 microscopic pores in the shell, and air seeps in to replace it. The ballast tank grows from a small pocket to a large air bubble, and eventually the submarine becomes buoyant enough to float.

The air cell occupies roughly the same percentage of the egg’s volume as your age determines your lung capacity — it grows with time. A fresh egg has an air cell of about 0.3 cm deep. After 30 days in the fridge, it can reach 1.5 cm. The float test directly measures this air cell size.

The Reality Check: Where the Float Test Fails

Here’s the problem: the float test measures age, not spoilage . A 60-day-old egg that was properly refrigerated its entire life will float, but it is still perfectly safe to eat. Meanwhile, a 7-day-old egg that was left on the counter in a warm kitchen for 3 days may harbor millions of Salmonella cells that multiplied rapidly in the heat — yet it will sink because the air cell is still small.

Real-world cautionary tale: In 2022, a food blogger in the UK demonstrated the float test on TikTok, then cracked the “fresh” egg into a pan. The egg had a visibly spoiled yolk — it was liquid, discolored, and had an off odor. But it sank in water because the shell was intact and the air cell was small. The egg had been contaminated by Pseudomonas bacteria that entered through the pores during a 2-hour period when the carton was left in a car at 30°C. The float test gave a false negative.

The Floating Fresh Egg Paradox

Some genuinely fresh eggs also fail the float test. Why? Two main reasons:

Porosity variation : Some hen breeds lay eggs with naturally more porous shells. A 5-day-old egg from a Leghorn hen can have the same air cell size as a 3-week-old egg from an Orpington High-altitude eggs : At higher elevations, the lower atmospheric pressure causes more gas exchange through the shell, enlarging the air cell faster. An egg stored at 2,000 meters elevation has the same float test result at 7 days as an egg at sea level at 21 days

Analogy: Using the float test alone is like checking a car’s odometer to determine its mechanical condition. The odometer tells you the car’s age but says nothing about whether the engine is damaged or the oil has been changed. The float test tells you about the egg’s age but nothing about bacterial contamination, temperature abuse, or internal quality.

What Professionals Use Instead

Candling : Holds the egg in front of a bright light to inspect the air cell size, yolk position, and blood spots. This is the standard method in commercial egg processing Haugh unit measurement : A scientific measure of egg white thickness. The thicker the white, the fresher the egg. Professional processors use this for quality grading The sniff test : Crack the egg into a clean bowl and smell it. If you can smell anything unpleasant, discard it. This is the only truly reliable home test for spoilage Visible inspection : Check for cracks, slime, or powdery residue on the shell
